I am writing this post from the picnic table in the campground. Honestly, not the worst place to work.
A lot of years ago, Mr. Table and I started tent camping with some friends. It was great! I’ve loved camping since I was a little girl. The only down side was Mr. Table hated sleeping on the ground, and I hated sleeping on the air mattress. Especially after drinking, all day.
I started to become obsessed with getting a camper, but I wanted a pop up, so that I felt like I was still camping, but just a bit better. We found one on Craigs List, and had so many great times in there. We kept that camper for 2 years.

A pop up camper has canvas on the sides, like a tent, but with a solid roof. Honestly, a great way to camp. Even in the rain, we would stay dry. But just like a tent, you cannot put the pop up away wet. That would create mold, which is something that no one wants. And it would rain. Every. Single. Time. Really, every time we went camping. Even if it was just for a few hours, it would rain. Which meant that when we got home, we would have to open the camper up to dry, then close it again.
Do you know how something that is so much fun, ins’t any more?? And I LOVED my camper. Finally I couldn’t take it anymore, and begged Mr. Table for us to get a new camper sooner than we had planned.
It was Mother’s Day weekend. As a mom, I celebrated by going to camper lots. We knew what we needed, and wanted in a new camper. A wet bathroom was not something we wanted again. Also a separate sink for the bathroom was high on the want list. I hated brushing my teeth, in the same sink I wash the dishes in. Just wrong in my head.
Mr. Table and I found a travel trailer, that fit our size requirements, (the driveway is only so long) our wish list, and in our price range. I was one happy lady. Almost immediately we took it out for a long weekend. I felt at home.

We have a full sized kitchen inside, as well as an outdoor kitchen to cook all of our meals. After getting a nice memory foam mattress topper, we sleep just as good, if not better in the camper bed. Truly the luxuries of home, in nature. What could be better?
Since we have such an amazing set up, I use it every chance I can. Eating in the camper is just like eating at home. This weekon the menu, Lentil Pasta with Broccoli Rabe, Garlic and Oil. So darn yummy!
Don’t be discouraged to make amazing meals in other places than the traditional kitchen. I have made some of my best meals on a portable 2 burner stove and mini grill.
