One pot meals really are my go to. I can take hours and make all of these really fancy dishes. But what I love most, are the simple meals that I make. And if there are not too many dishes to wash, even better.
Growing up, broccoli rabe was a side dish we ate often. It is a bitter green, and I just love it! This green goes so well with anything you serve. Steak, chicken, or in this case with sausage over pasta. What could be better?

Broccoli Rabe and Sausage
- 4-5 cloves garlic, minced
- 4 Tbsp olive oil
- 1 bunch broccoli rabe, trimmed and boiled (or you can use frozen)
- 3/4 lb sausage, out of its casing
- 1/2 tsp seasoned salt mix
- 1/4 tsp crushed red pepper (optional)
Heat 2 Tbsp oil in large skillet.
Add in sausage, breaking it up with a wooden spoon. Cook until no longer pink.
Add in garlic. Once it starts to brown, add in drained broccoli rabe. Mix well. Add in 1-2 Tbsp olive oil if needed.
Bring water for pasta to a boil. Cook pasta according to package directions.
Add 2 ladles of starchy pasta water to sausage mixture. Use more if needed to create a sauce.
Serve broccoli rabe and sausage over pasta.
Enjoy!
