Gluten Free Stuffed Mushrooms

Hello there you wonderful humans!

How are you doing today?  Week going okay so far?  Thank the Lord we are doing well here.

So I am still having a hard time coming up with a decent gluten free oat sandwich bread.  It is very frustrating, but I know with time, I will come up with something.  I really do like the Bread Crumb Patties for sandwiches.  But I really would like to come up with a real loaf of bread, like the cool kids eat.  

So with all of these loaves that come out not quite right, I get to have lots of bread crumbs.  Now if you have tried to stuff anything with store bought gluten free bread crumbs, you know that it just turns into a gelatinous mess.  Thankfully I have all of these homemade bread crumbs.  WooHoo!!  If you don’t happen to have #breadfail bread crumbs on hand, toast, then pulse your favorite gluten free bread to make fresh crumbs.

Gluten Free Stuffed Mushrooms

  • 1/4 cup mushroom stems, cleaned and chopped
  • 2 cloves garlic, grated
  • 3/4 tsp seasoned salt mix, plus more to season mushrooms
  • 2/3 cup gluten free sourdough breadcrumbs
  • 1/4 cup olive oil

Preheat oven to 400’F.

Lightly grease a cookie sheet.  Place your cleaned and de-stemmed mushrooms on the tray.  Spray with olive oil, and season with seasoned salt mix.  Set aside.

Add chopped mushroom stems, grated garlic,  seasoned salt mixand breadcrumbs to medium bowl.  Mix well.

Use a spoon and fill up mushroom caps with stuffing mixture.

Bake in oven uncovered 35-45 minutes, until mushrooms are tender.
