Good morning. How was your week?
Today is Saturday, so that means laundry, and cleaning. I know that I am home everyday, and I do take care of some chores during the week, but I like to keep some kind of schedule.
My husband and I did the laundry on Saturdays, because we were at work the rest of the week. Now, it helps to keep me on track of days of the week. Its really sad how you don’t know the day of the week, when you haven’t left the house in weeks.
We have unfortunately had to ask our cleaning lady to hold her services until this virus passes. Maybe I can designate a room for each day of the week? This way, I won’t spend EVERY day in the kitchen 🤣🤣.
Growing up, my mom always mixed the rest of the egg and breadcrumbs from making chicken cutlets. She would add some cheese and milk before frying. Boy were those babies good.
So it got me thinking. I need a bread recipe. I’ve tried several times to make oat bread, and it is usually very heavy. And thick. But I’m working on it. I missed sandwiches. With bread.
And these were a very happy accident.







Fry Bread Patties
- 1 cup oat flour
- 1/2 tsp seasoned salt mix
- 1/4 garlic powder
- 1/2 tsp parsley
- 1/2 tsp nutritional yeast
OR
- 1 cup leftover breadcrumbs
- 1 Tbsp dry active yeast
- 1 egg, whisked
- 1 cup oat milk
Mix all ingredients together in a large bowl.
Set on counter with towel lightly covering bowl until doubled in size, 2-3 hours.
Carefully fry spoonful of batter in hot oil, 2-3 minutes. Carefully flip, cook additional 2-3 minutes until the middle is cooked through.
Sprinkle with more salt as soon as the patty comes out of the oil. Drain on paper towel.
Serve or refrigerate up to 7 days.
