Best Meatloaf

Hello there everyone! 

I have a great meal for you today.  I made this meatloaf a few weeks ago, and my family loved it so much, I made it again the following week.

This is more steps than our usual recipes, but I promise you it is so worth it.  Your family will think you took them to some fancy restaurant with this one.

Roll up your sleeves, and give yourself a little time.  You will thank me, I know it.

Saute your vegetables

Add the seasonings to the veggies in the pan

Mix the other ingredients with the meat

Lay the prosciutto out on plastic wrap

Now spread the meat over the prosciutto

Lay on your fresh greens, and cheese if using
use plastic to roll up best meatloaf
Use the plastic wrap to help you roll up the meatloaf. Use the last 2 pieces of prosciutto to close up the bottom

Seriously the BEST Meatloaf ever!

Best Meatloaf

  • 1 lb ground turkey
  • 1 egg
  • 1/2 tsp seasoned salt mix
  • 1/3 cup gluten free breadcrumbs
  • 1/2 tsp garlic powder
  • 1/4 cup grated asiago, optional (you can use 2 Tbsp nutritional yeast)
  • 6-10 pieces prosciutto
  • 2 Tbsp bacon fat, or cooking fat of choice
  • 2 medium carrots, diced
  • 1 sweet onion, diced
  • 1 1/2 tsp ground thyme
  • 1/2 tsp marjoram
  • 1 tsp sage
  • 2 cups fresh greens, I used Power Smoothie blend
  • 3 sticks cheese (optional)

Preheat the oven to 375’F.  Line a baking sheet with parchment paper.

Cook the onion and carrot in bacon fat in large pan.  Once they are soft, add in thyme, marjoram, and sage. Set aside to cool.

In a large bowl, mix turkey, egg, breadcrumbs, salt, garlic and asiago.  Mix well, add in cooled vegetables. Set aside.

Lay out a long piece of plastic wrap or parchment paper. Hold back 1 or 2 pieces to help close up the meatloaf after rolling.

 Lay out the prosciutto slices, overlapping the edges on the plastic wrap.  Then evenly spread out the meat mixture on the prosciutto.

Now lay the fresh greens on top, and the cheese sticks if using.  Use the plastic wrap to help you roll up the meat loaf.  Use the reserved slices to help you close up the bottom of the roll.

Lay the meatloaf on the prepared pan.  Bake in oven uncovered 45 minutes- 1 hour, until meatloaf is cooked through.

Remove from  the oven, cover and set aside for 15-20 minutes before slicing.
