Good morning to you. The weekend is almost upon us. We made it through another week.
Do you have any plans for the weekend? I just want to be able to spend some time with my husband, in our yard, and relax. And try to come up with something for dinner. Are you like me, you get sick of eating the same things all the time? I even get sick of cooking the same way. I get on a BBQ kick, then don’t want to eat BBQ food for a while. You know? Maybe I’m the only crazy one. Nah!
These Lemon Basil Chicken Wings are great for changing things up a bit. You can roast these in the oven like I did, or grill them. They will be fabulous either way.






Lemon Basil Chicken Wings
- juice and zest of large lemon
- equal amount of rice wine vinegar
Together they equaled about 1/3 cup. You want a light tasting vinegar, to not overpower the lemon. Just to add to the zing.
- 1/2 cup olive oil
- 1 Tbsp freeze dried basil
- 2 tsp freeze dried garlic
- 2 1/2 tsp seasoned salt mix
Mix everything well, pour over your chicken in a large bowl. Let marinate 6 hours, or overnight. The longer it rests, the better it tastes.
Pre-heat oven to 400’F.
Lay out the chicken wings in a single layer on an oven tray. Roast 35-45 minutes, until chicken is cooked through, remembering to flip the chicken halfway.
Serve with your favorite sides.
