Pulled BBQ Beer Chicken

Morning all.  What’s going on today?

I hope that you all have been safe, with all of the different things going on in our world right now.  Is there something that makes you feel better?  Whatever it may be, I hope you have it, and that you smile more than once today.

You know what makes me smile, a delicious dinner that I don’t have to work hard on.  This BBQ Beer Chicken is one of those meals.  I put everything in my Instant Pot, and walk away.  About an hour before dinner, I throw some sweet potatoes into the oven (or toaster oven) to bake, make some broccoli and dinner is ready.  Could not be easier.  Or more delicious.  And healthy. 

Tell me, who doesn’t love that.  I know some of us are still not working outside the home, but we still have so many things to get done in the day.  Schooling our children, working from home, cleaning, laundry, errands, and on and on.  I really want to know how I got things done before.  Were there more hours in the day?

Give this chicken less than 10 minutes before you start your day.  And I promise, you will have a great reward waiting for you at dinner time.

Make a bed on the bottom of the cooker insert with the onions

Set your time and walk away (My chicken was still frozen.)

Pulled BBQ Beer Chicken

  • 1 lb boneless, skinless chicken breast
  • 1 bottle gluten free beer
  • 2 Tbsp BBQ Rub
  • 1/2 Tbsp Seasoned Salt Mix
  • 1 large sweet onion, cut into chunks

Lay the onion on the bottom of your slow cooker insert.

Liberally season the chicken breasts with half of each the salt and bbq rub.

Lay chicken on onions, pour the beer down the side of the pot.  You dont want to wash the seasoning off of the chicken.

Set the time, and walk away! (3-4 hours on high, 7-8 hours on low.)

When the cooker is done, shred the chicken.  Add in the rest of your BBQ Rub.  Taste to see if you need more salt.  Add according to your taste.

I served ours in baked potatoes with Sweet Mustard BBQ Sauce and a side of broccoli.  This is so fast and good, I know you will love it!
