Happy First Day of April!!
Let’s all take a nice deep, clean breath in together, and out. This month will be better than the last. You know why? It my BIRTHDAY MONTH!! Okay, so I don’t get to celebrate the whole month, but a girl can try!
I have told you all before how much I love music. All kinds ( here ). But lately I’ve been listening to the “90’s Station” on Amazon Music. And I’m dancing and singing along. And then I realized, 1990 was 30 years ago!!!! Oh boy. Maybe I don’t want to be so excited for my birthdays anymore? Nah! I have no problem with my age. I will be 40 at the end of this month. And still going strong!
In our house, we get to choose what we want to eat for dinner on our birthday. We can choose a restaurant, or I will make anything that my husband or son ask for. I like them. They are cool people.
What do you do in your house to celebrate birthdays? You should absolutely add these Sweet Potato Wedges to your meal. They are SO yummy!!




Oven Baked Sweet Potato Wedges
- 4 sweet potatoes sliced in wedges
- 1 tsp Herbs de Provence
- 1 tsp Salt Mix
- 3-4 Tbsp olive oil
Preheat oven to 375’F.
Place sliced potatoes in large bowl. Add in oil and spices, tossing to coat well.
Bake on a rimmed baking sheet, in a single layer.
Bake 20 minutes, turn and rotate pan. Cook additional 15-20 minutes until the potatoes are cooked through.
