Plantains

Happy Friday Eve!

What are your plans for the weekend?  Have you been homeschooling?  Or do you have a job where you have been able to work from home?

Remember to take breaks.  Get outside in the sunshine.  But for the love of God, don’t organize a basketball game with everyone on your block.  Keep to that social distancing.  The better we are at this, the less time we will have to do it.  Open your windows to let some fresh air into your home.  I’ve been trying to open the upstairs windows.  I figure I should socially distance my windows too. 

And then go make some food.  Food always makes me feel better.  These plantains are on the list of Feel Better Foods.

It is 3 ingredients, and 2 spices.  But holy cow are they awesome!

We want green plantains for this dish
Use the back of a spoon or fork to help get the peel off
Boil for 20 minutes in salted water
Once your onions are sliced, cook in oil in pan
Drain plantains when they are fork tender
Add plantains to onions and oil, then mash away
Once mashed, flatten to create a crust
Use a flat spatula to flip, don't worry if it breaks into pieces
Oh so good!

Plantains

  • 3 large green plantains
  • 1 Tbsp Kosher Salt for water
  • 1 onion, I used 1/2 red, 1/2 yellow
  • 1/4 cup olive oil
  • 1 1/2 tsp, plus 1/4 tsp Seasoned Salt Mix
  • 1 tsp garlic powder

Cut plantains in to 3-4 large chunks.  Use the back of a spoon to help get the peel off.

Cover with cold water, boil with 1 Tbsp kosher salt until fork tender, about 20 minutes.

Add half your oil to a well seasoned cast iron pan.  Once oil is hot, cook your onions while the plantains boil. Season with 1/4 tsp Seasoned Salt Mix. 

When plantains are ready, drain and add to onions.  Mash with potato masher.  Add rest of oil while mashing.  

Season with salt and garlic powder.  Mix well.  

Use a spatula to flatten the onion and plantain mixture.  Cook on medium until a nice crust forms, about 6-7 minutes.  Flip to get crust on the other side.  Don’t worry if it breaks apart.  That just means more places to get a nice crust.

Cook additional 6-7 minutes, until crispy.

This works so well as home fries, or a starchy side dish to any meal.
