Chicken and Gluten Free Stuffing

Good morning all.

How have you been doing?  I am on day 10 of not leaving my house.  I am doing this voluntarily for the protection of my son and family.  Mr. Table is still working everyday.  He is a truck driver, and considered “essential.”  

I know that what he is working on will benefit an entire neighborhood’s infrastructure, but I want to be selfish and have him home and safe with us.  Sorry, not sorry.

What are your in the house plans for today?  I say make this Chicken and Stuffing, and make believe its Thanksgiving. 

It will make you smile, I’m sure of it.

So far the best GF stuffing mix I have found
season packet from stuffing
All you need is the seasoning packet
carrots and onions for stuffing
Saute carrots and onions in oil
mushrooms and garlic stuffing
Add in some garlic and sliced mushrooms
stuffing packet sprinkled on veggie
Season with seasoning packet, remember to hold some back for your chicken
broth for stuffing
Add in 1 cup of chicken stock or broth
boil stock with stuffing veggies
Bring to a boil
stuffing mixed in pan
Add in bread cubes, and mix well
stuffing topped with chicken
Add the chicken to the top, sprinkle on the rest of your seasonings

Chicken and Gluten Free Stuffing

  • 1 box GF stuffing
  • 2lbs chicken, I used breast and thigh
  • 1 10oz. package mushrooms, sliced
  • 2 large carrots, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup broth or stock
  • 5 Tbsp Olive oil

Preheat oven 350’F

Heat large oven safe pan with lid on stove.  Add in olive oil.  Saute onions and carrots.

Once soft, add in mushrooms and garlic.  Once garlic is fragrant, add in seasoning packet, holding back about 2 tsp to season chicken.

Mix well, add in chicken broth.  Bring to a boil.  When it boils, turn the stove off.  Add in cubed bread, mix well.  

Place chicken on top of stuffing mixture, using the rest of the seasoning packet to flavor the chicken.

Cover, cook in preheated oven 40-50 minutes until chicken is cooked through.
