Good morning to you. How was your week?
I had one of those days the other day when I could not decide what to cook for dinner. I wanted breakfast, I wanted ribs. Why couldn’t I have both? So guess what, we had Eggs and Ribs for dinner.
I’m starting a new trend here. Move over bacon and sausage. We have a new breakfast meat in town.
I say eat what you like. Who says you can only have ribs at dinner?
This has to be one of my most favorite meals in a while.
It is so good to have staple recipes to fall back on. These plantains are so simple to make. They are filling, and cheap. Perfect for times like now.
Broccoli is a favorite vegetable around here, so I know we always have some in our fridge.
When you can put a healthy meal on the table, even when you have no idea what to make, that’s a good day in my book.
