Vegetarian Meatballs

Hello there.  Happy December to you.  I pray all is well with you and your family.

Can you believe it is December?  I mean really.  This year has been so crazy.  June had 487631 days, and now I feel like these past few months have gone by in the blink of an eye.  Do you feel that way too?

Meat is still something that I am not including in my diet. I really miss pork.  But honestly, that’s about it.  I have figured out how to replace meat in most of my go to dinner ideas.  Lentils have really done a great job replacing chop meat for me.  Whether it be ground beef or turkey.

We have already made Vegan Chili, Red Lentil Taco Stuffed Sweet Potato and Lentil Stew to just name a few.  Lentils have proved to be a very versatile little kitchen helper. Today I want to share with you how I made “meatballs” out of lentils.  I love when I come up with a new recipe, and Mr Table and Table Jr like it as much as I do.

Mix all the ingredients in a large bowl. Use your hands to make sure it is mixed very well.

Add in the cheese of your choice for flavor and to bind the mixture together

Vegetarian Meatballs

  • 1 cup lentils, boiled and cooled
  • 1 egg
  • 1/2 cup breadcrumbs
  • 3/4 tsp seasoned salt mix
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4-1/2 cup shredded cheese, I used Asiago. You can also use dairy free. 
  • oil for frying. 

In a large bowl, combine cooked and cooled lentils, egg, breadcrumbs, salt, garlic and onion powder.  Use your hands to mix well.  Add in enough cheese to help hold everything together.  It will make the mixture easier to form your balls. 

Form the mixture into balls.

Heat oil in a frying pan.  Carefully place the lentil balls into the oil.  Fry on all sides until golden brown.

Serve with your favorite pasta, sauce or on their own.
