Growing up, my mom made breaded chicken cutlets all the time. Everyone loves a good fried chicken cutlet. Don’t you?
Once I developed all of my food allergies, I could no longer have my mom’s cutlets. That was a sad day for sure. Finding yummy gluten free replacements don’t always work out as good as we hope they will.
So how can we still have those delicious foods from our childhood, without all of the abdominal pain and bloating as an adult?
OAT FLOUR!! Gluten free oat flour is delicious. It is easy to make, or purchase. And you can use it in sweet or savory applications. When I want a chicken cutlet, or fish stick, or anything that requires a tasty breading, this is my go to.
Seasoned Breadcrumbs
- 2 cups gluten free oat flour (This is the brand I use http://glutenfreeoats.com/)
- 2 Tbsp dried parsley
- 2 Tbsp nutritional yeast
- 1 Tsp garlic powder
- 1 1/2 tsp Seasoned Salt Mix (omit pepper for AIP)

Combine all ingredients in a gallon sized zip lock bag.
Seal top and shake vigorously.
Store in fridge for up to 2 weeks.
