Chocolate Chip Pound Cake

Good morning to you.  How are you today.  

I hope you have had a productive week.

What plans do you have for the weekend?  Normally this time of year, I try to see friends and family that you don’t always get to see the rest of the year.  Being so close to all the holidays really makes me miss people more.  Which is kind of strange, considering the rest to the year I absolutely love to be by myself.  

And since I want to see people, and enjoy good conversation, I like to have something on hand to serve.  I know that this year is different, and we cannot all gather around the table and chat for hours on end.  

We can still gather in the backyard, and have lots of fresh air so that everyone remains safe and comfortable.    For those of us that have fire pits in the yard, load that puppy up for some warmth.  If you don’t have a fire pit, you can still get together.  Just bring out blankets, hats and scarves.  Make a pot of coffee, tea or something stronger to keep everyone warm.  We will figure out how to still be together in a safe way.  We can do this!

How do you usually spend this time of year?  Are you like me and spend lots of time in the kitchen?  I always remember going to  my nonna’s (grandmother) house, either one, and they always had something to eat.  Even if it was just some fresh homemade cookies to go with a good ol’ cup of Sanka. 🙃 That is how I want to be.  Just like my nonna.  

Thankfully this Chocolate Chip Pound Cake is a breeze to put together.  And it is just one variation of my Yogurt Pound Cake, so I know that it is not only delicious, but I have the ingredients on hand.

You don’t have to wait for a holiday or special occasion to make this Chocolate Chip Pound Cake.  Make it for Tuesday night dessert.  Your family will be so surprised.  No worries, I won’t tell them it only took you 10 minutes to make.

This Chocolate Chip Pound Cake is so rich and decadent

Chocolate Chip Pound Cake

  • 1 cup oat flour
  • 2 Tbsp coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup coconut sugar
  • 1/2 cup shortening
  • 3 eggs
  • 1 cup unsweetened coconut yogurt
  • 1 cup chocolate chips

Preheat the oven to 375’F.  Generously grease and flour a cake or loaf pan.

Mix oat flour, coconut flour salt and soda, set aside.

In a large bowl, cream sugar and shortening together.  Add eggs in one at a time.

Add dry ingredients on top of wet, fold to mix in.

Fold in yogurt to combine.

Lastly, add in the chocolate chips.

Pour batter into greased pan.  Bake uncovered 50-60 minutes, until a toothpick inserted in the center comes out clean.

Cool completely in pan before  slicing.
