Do you always know what you are making for dinner?
I try to have a plan in mind. I try to remember to take something out of the freezer in the morning before going to work. That is what a responsible wife/mother does, right?
Sometimes, I fail. Totally. Today was one of those days.
I woke up before my alarm today, which by itself is a small miracle. I am a total snoozer. Like 4 or 5 times snoozer. I got up, and got ready. Took care of the cat like a good cat mommy. Packed my lunch, made coffee. Even remembered to start the car so that it was nice and toasty warm for me.
And then as I’m driving down the road all proud of my morning, I realized I didn’t take out anything to cook for dinner. Gggrrrr!! Thank God my son did not have any classes today. I asked him to take out whatever he wanted to eat. My surprise dinner protein—turkey chopmeat. (I think this was just in the front of the freezer.) And I think to myself “What the flip flop am I gonna make?” My husband always loves a good chopmeat with veggies one pot, and I have loads of veggies in the fridge. So I just started to pull things out, and chop away. This came out AMAZING!! I swear, I really do love the simple, no fancy ingredient meals that we have.
A few veggies, some onion and garlic, a little salt, and dinner is ready. A delicious, and healthy dinner. This goes well over rice, cauli rice, or pasta. We like it with red lentil pasta. It has a great texture, and we can double our protein for those long days when you need to keep your energy up.



Turkey and Veggie One Pot
- 1/4 cup olive oil
- 1 medium red onion, chopped
- 2 large cloves garlic, sliced
- 4-5 mushrooms, sliced
- 15-20 thin asparagus spears, chopped
- 1/2 cup shredded carrot
- 1 cup zucchini, sliced
- 1/4 cup cabbage, shredded
- 1/4-1/2 cup water
- 1 tsp Seasoned Salt Mix, to taste
- 1 lb ground turkey
Add oil to your largest heavy bottom pot. When hot, add in ground turkey and onions. Brown together, 7-8 minutes. Break up meat into bite sized chunks.
Make a hole in the middle, add in zucchini. Mix well, cook 2-3 minutes.
Again make a hole in the middle, add in carrots. Mix well, cook 2-3 minutes.
Make a hole in the middle, add in garlic, mushrooms and asparagus. Mix well, cook until all veggies have softened.
Add shredded cabbage, mix well. Cover, cook 5 minutes.
Delicious on its own or over rice, cauli rice or pasta.
