Sweet Potato Home Fries

Hello again.

How are you doing today?  What have you been cooking lately?  I am trying to keep our meals interesting, since we all have so much time on our hands.  😂  

The other day, I felt like having breakfast for dinner.  One of my favorite breakfast foods from a diner is Home Fries.  Unfortunately, I cannot eat white potato.  I have successfully re-introduced some night shades into my diet without incident.  Potato was not one of those things.  I can use some chili powders, and certain dried spices.  But I’m out on the fresh potoato.  

All that did was make me work harder to replace the things that I love most, with foods that will not make me feel like my stomach will explode after eating.  Or strange rashes on my skin, that mysteriously come and go.

Sweet Potato Home Fries

  • 2 lbs sweet potato, 1 large or 2 medium, cubed
  • 1 small onion, chopped
  • 1 Tbsp Bacon fat
  • 2 Tbsp olive oil
  • 1/4 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp Seasoned Salt Mix

 

Add bacon fat and oil to pan.  Once melted, add potato and onion to pan.  Mix well, making sure all is coated well with fats.

Add in spices, mix well again. 

Cover, set flame to med-low. 

Cook until potato and onions are soft, stirring occasionally.
