Frittata

Hey, happy Hump Day!

Are there any plans for today?  Did you ever clean out that extra closet?  I didn’t, not yet any way.  Where is all that extra time?  I feel like I have been busy, most days anyway.  I’ve done work on the blog, made my weekly staples, laundry and cleaning.  All of the same stuff I do with my full time job.  Where are those 50 hours from every week?  Did I really spend them all watching The Expanse on Amazon Prime?

Do you feel like you are still running a mile a minute, even though we are home?  I think today calls for a quick, easy dinner.  Don’t you?

Here is a fast meal, using yesterdays leftovers, to fill up my family. We all need to clean out the fridge every now and then.  Please add whatever cooked vegetables you have on hand to this. 

Frittata is just a fancy omelet cooked on the stove, then in the oven for a bit.  You got this!

Whisk milk and salt into the eggs

Add into your heated vegetables

Served with a side salad, this is a great dinner option

Frittata

  • 8 large eggs
  • 3/4 tsp Seasoned Salt Mix
  • 1/2 cup oat milk
  • 1 tsp nutritional yeast
  • 1/4 tsp garlic powder

Pre-heat oven to 325’F.

Whisk all ingredients together.

Pour over your heated vegetables in a well oiled pan.  

Cover, cook on low, until the sides start to bubble.

Put in oven for 20-30 minutes, until the center is set. 

Carefully remove from oven, let rest 5 minutes before cutting.
