Skillet Cookie in the Camper

Good morning everyone!  Make sure you remember to smile today!

Have you been able to get out?  Have you gone to the park, on a walk or maybe a drive?  We have been staying home for the last several months.  I am not comfortable in closed spaces to begin with, but with all of this COVID craziness still going on, I am extremely thankful for another place to go.  We still stay “home’ in the camper, but we are in the mountains.  The fresh air has truly been my saving grace in all of this.  

Just because we are in our camper, doesn’t mean we still don’t eat the same way as if we were at home.  We picked out our camper mainly for the full kitchen that it has.  Because of my allergies, it was the most important factor.  We have a full kitchen inside, including an oven.  Having fresh cookies to eat by the fire is better than a ‘smore any day, in my book.

Melt the shortening, then mix in your ingredients one at a time

Bake in a preheated oven, at home or in your camper 😉

So good, and all mixed in the same pan you bake it in

Skillet Cookie

  • 1/2 cup shortening
  • 3/4 cup coconut sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 cup oat flour
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup chocolate chunks or chips

Preheat the oven to 350’F.

Add shortening to your pan that you will bake the skillet cookie in.  Place in heating oven to melt shortening.

Mix dry ingredients in a small bowl.

Once melted, let cool 5 minutes.  Add in sugar, mix until dissolved.  Next add in egg and vanilla.  Mix well.

Fold in dry ingredients.  Once mixed, add in chocolate chips.

Bake in oven 20-25 minutes until cooked through.
