Have you always led a gluten free life? I have not. I developed allergies later in life, and had to stop eating so many things that I had loved.
I can remember getting a box of donut holes with friends or coworkers and fighting over the jelly filled ones. Oh those were the days. But then I think back on the heartburn after eating them. No bueno.
These Jelly Donut Holes are super simple to make. And so much better for you!




Jelly Donut Holes
- 6 large eggs
- 2 Tbsp Oat milk
- 1 Tbsp vanilla
- 3/4 cup coconut flour
- 1 1/2 tsp gluten free baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 cup shortening
- 3/4 cup coconut sugar
- 1/2 cup raspberry jelly, or your favorite flavor
In a medium bowl, mix flour, salt, baking soda and baking powder, set aside.
Cream the shortening and sugar together in a large bowl. Add eggs in one at a time, scraping down the sides of the bowl between each addition.
Turn off mixer, add in dry ingredients. Slowly mix in dry.
Add in milk and vanilla.
Beat mixture on medium speed for 1 minute to incorporate air into the batter.
Preheat your donut hole pan. Brush with shortening.
Fill donut holes 3/4 full, cook on medium for 3 minutes. Flip the donut holes, cook 2-3 minutes more until they are cooked through.
Use a piping bag, or food injector to fill the donut holes. Insert the nozzle into the donut hole carefully. Gently squeeze jelly into the donut hole.
Repeat with all donut holes.
