Do you have plans for the up coming week? Are you seeing more people now that the weather is warmer?
We have seen a few friends here, but I am still sticking to outside activities. We have been to our camper in the Pocono Mountains, and it has been fantastic.
Most people are keeping to social distancing. Even when we all go out for our strolls around the campground, people step to the side to give enough room. If you need to interact with any of the campground staff, they ask that you wear a mask. Sure thing, no problem.
Being out in the fresh air is so good for us. I hope that you can get outside, go for a walk. Feel the sunshine on your face.
These little things we can do for ourselves make a difference. Being the best you that you can be, makes you be the best you can be for everyone around you.
And one of the ways to be good to everyone around you is to make snacks. Lots of snacks. Like these beer battered cauliflower. Don’t tell them its gluten free. No one will know.






Gluten Free Beer Battered Cauliflower
- 1 cup gluten free beer
- 1/2 cup water
- 1 cup gluten free oat flour
- 1 egg, beaten
- 2 tsp garlic powder
- 2 tsp dried oregano
- 1 Tbsp dried parsley
- 1 tsp Seasoned Salt Mix
Preheat oven to 375’F.
Line baking sheet with parchment paper, then spray with olive oil.
Mix dry ingredients in large bowl. Add in beaten egg and beer. Use water to thin out if batter is too thick.
Dip each piece of cauliflower in batter, shaking off any excess. Lay on lined sheet.
Bake in oven 15-18 minutes. Flip the cauliflower over, and rotate pan. Bake additional 15-18 minutes until golden brown and cauliflower is cooked through.
Serve with your favorite dipping sauce.
