Mostly Egg White Omelet

Good morning.  How are you today?

I hope you have a productive week. 

Do you ever find yourself with extra egg whites in the fridge?  I have them all the time.

Sometimes I add them to meat balls, or meat loaf.  Other times I use them to make delicious omelettes.    Is that what you do as well?

It is really hard for me to throw food away.   I really get upset if something doesn’t get eaten, so I always try to find ways to use up what I have on hand.

Today I had a piece of red onion, 1 sweet potato, 3 egg white, and a couple of whole eggs.  

I cooked the sweet potato and onion in some olive oil with my salt mix until they were soft.  

In a bowl I mixed the egg whites, 2 whole eggs, some oat milk and a bit more salt mix.  I poured it over the potato and onion mixture, covered it and let it cook on low heat for about 10 minutes.

A little of this, and a little of that made such a delicious lunch
