I hope that your week has started off well.
Do you always eat all of the fruits and vegetables that you get from the store every week? We try our hardest to use up everything that we buy. But there are those times when something gets to the back of the fridge, and you totally forget that its there.
That is exactly how this cake came about. I was looking for something in refrigerator, and found the ENTIRE bunch of bananas, hidden on a lower shelf in the back.
Banana Chocolate Swirl Cake is so good for breakfast, a snack or after dinner dessert with a cup of coffee. It is made with whole ingredients, and whole grain oat flour, so I will say its good for you too.
Go ahead, make one for yourself, then another for the family.













Banana Chocolate Swirl Cake
- 4-5 bananas, very ripe
- 1/3 cup coconut sugar
- 1/3 cup shortening
- 3 large eggs
- 2 tsp cinnamon
- 2 cups oat flour
- 1 tsp baking soda
- 1/4 tsp sea salt
- 3 Tbsp cacao powder
Preheat the oven to 350’F.
Grease and flour a baking dish. Use cacao powder instead of flour for a more intense chocolate flavor.
In a medium bowl, mix the flour, soda and salt. Set aside.
In a large bowl, cream the shortening and sugar together. Add in eggs one at a time, scraping the bowl down after the last egg is added.
Add broken up banana to creamed mixture. Mix well.
Pour the dry mixture over the wet, slowly mix in until combined.
Scoop out 1 cup of batter and add to a small bowl. Whisk in cacao powder.
Pour remaining cake batter into the prepared oven safe baking pan. Dollop the chocolate mixture over the cake batter. Use toothpicks to swirl the chocolate into the batter.
Bake in the oven 45-55 minutes, until a tooth pick inserted into the center of the cake comes out clean.
Cool,dust the top with powder sugar.
