Grilled Chicken Salad

Good morning.  How are you doing today?

I hope that your week has been going well.  Do you have any plans for the weekend?

Things have been real crazy around here lately.  I am still working from home, and I don’t have any small ones getting ready for school or remote learning.  Not really sure why, but I feel so pressed for time lately.  Do you get like that too?

Just because time is going by fast, and I feel like there have been way less than 24 hours in a day, eating well still needs to be a part of my routine.

It would be awesome if I could drop by my favorite shop and pick up dinner.  And I guess I could, but other than grilled meat and sauteed broccoli, there isn’t much on a menu that is safe for me to eat.  

That is why cooking for myself is sometimes better than going out.  I know what spices I can use to have flavorful and satisfying meals.  

My friends and husband get upset sometimes because I don’t want to go out.  It isn’t that I don’t want to go out, I just hate for my husband to spend so much money on such a simple meal for me.  When I go out, I want to eat something that I cannot create at home.  Unfortunately, since all of my allergies have invaded my life, that is no longer possible.

No worries though, I won’t let anything get in the way of a happy tummy.  And this Grilled Chicken Salad is so flavorful and satisfying.  

This salad is the perfect meal to end a long busy day.  And it has minimal clean up, which is always a bonus.

Top the salad with the sliced chicken and enjoy!

Grilled Chicken Salad

  • 2 medium or 4 small chicken breasts, filleted in half
  • 1-2 Tbsp BBQ Rub
  • 1/2 medium lemon, juiced

Clean the chicken and fillet in half.  

Season well with the BBQ Rub and lemon juice.  Mix well.  You can add the lemon half to the bowl as well for extra flavor.

Marinate the chicken for 2-4 hours.

Grill until the internal temperature of the chicken reaches 160’F.  Let rest before slicing.

Add on top of your favorite salad, here we used tomato, radicchio, and romaine.
