Egg Hash with Arugula

Hello!  Good morning to you.  

I hope you have a most relaxing Sunday, today.  

Today I would like to share with you the most amazing Sunday brunch hash.  What is better on a lazy Sunday morning than an Egg Hash.  And with the addition of arugula, you have a complete meal.

This Egg Hash with Arugula is such a satisfying dish.  I made this on a lazy morning for Mr Table and myself at the campground.  No matter where we are, having delicious, healthy meals, that are allergy friendly are always on the menu.

And when it is all cooked in the same pan, that is a winner in my book.

Cook potato and onion in olive oil.

Cover, cook on low to your liking.

I like my eggs medium-well, Mr Table likes his scrambled.

Egg Hash with Arugula

  • 1/2 bag baby arugula
  • 4 eggs
  • 1 sweet potato, chopped
  • 1 small onion, chopped
  • 4 Tbsp olive oil
  • 3/4-1 1/2 tsp seasoned salt mix

Using a large pan, heat oil over medium heat.

Add in sweet potato and onions.  Season with salt mix.    Cook until they are both soft and starting to brown on the edges.

Make wells in the potato and onion mixture, add in the eggs. Season as well. 

Cover, cook on low until the eggs are to your liking, 5-8 minutes.

Turn off the heat, add arugula on top of the eggs. Season with  salt mix, cover. Let rest 2 minutes to wilt arugula.
