Ciao! How is everyone doing today? I am trying to remember to breathe, think my happy thoughts, and focus on the positive.
Have you started any new classes? Learning a new skill, a new online work out program? There are all kinds of advertisements to take classes for free. How can we spend our time, in a positive and productive manner. Lets not waste these moments that have been given to us.
Yes, I know its been LONG. And for some of us, it feels like forever. But it is not. Think of all the fond memories you will have 10 years from now. The laughs shared at family game night. Or that book you’ve been meaning to read. Take the time now, to be a better you for when this time is over.
Here is a delicious marinade, for your meats, chicken or veggies. Take that class, or read that book while dinner gets all yummy.

Ginger Garlic Marinade
- 1/2 cup coconut aminos
- 2 Tbsp rice wine vinegar
- 1 Tbsp chili garlic sauce, or to taste
- 2 tsp freeze dried ginger
- 2 tsp freeze dried garlic
- 1 Tbsp honey
- 1 Tbsp tapioca starch, optional ( I added to chicken wings to get a crisper skin on the grill.)
Mix all ingredients well.
Makes about 3/4 cup marinade.
Pour over your favorite meat, chicken or vegetables.
The thicker your meat, the longer you should marinate.
I like the freeze dried spices here, they have great flavor, and plump up nicely in the marinade. You can use fresh if available.
As you can see, this marinade works so well with chicken and pork. It is so flavorful!
