Flavorful Chili

Hey there.  How’s it going?

My day is not so fun so far.  I found something suspicious in my bank account.  I literally sat on hold for more than 2 hours, and when I finally got the opportunity to talk to someone, the phone cut out.  In the middle of our conversation.  And I have no idea if my dispute went through.  Awesome.  Can’t wait to sit on hold again.

What have you been doing in quarantine?  Have you read any new books?  Learned a new skill?  Or maybe a new language?  Binged on any TV show?

I have watched all 4 seasons of The Expanse on Amazon Prime.  Gotta say, not bad, not bad at all.  I have been asked about Tiger King.  We don’t have Netflix, and I honestly do not see why this is so popular.  A guy with 2 husbands that only wanted his drugs, a lady who had her pet eat her husband, and now the authorities are re-opening the case because it’s on TV??  No thanks.  

Do you have any other TV suggestions?  Before COVID-19 Quarantine, I really did not watch much TV.  There are a few shows that I like, don’t get me wrong.  But I know people that talk about certain TV shows as if its real.  Like in their own lives, real.  Umm, I think even “reality TV” is scripted.  

Well, whatever you choose to watch, have a great big bowl of this chili by your side.  Nothing better than yummy food on a comfy couch.

Chili

  • 2 Tbsp olive oil
  • 1 lb ground meat
  • 2 cloves garlic, minced
  • 2 carrots, cut in bite sized pieces
  • 1 medium onion, cut in bite sized pieces
  • 3 cans of beans, washed well of packing liquids
  • 3 Tbsp Taco Seasoning
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1 1/2 tsp Seasoned Salt Mix
  • 1/2 oz unsweetened chocolate
  • 1 bottle gluten free beer
  • Water
 
Heat the oil, using a heavy bottom pot.  Add in the carrots and onions, cooking 2-3 minutes.  
 
Once the onions start to soften, add in ground meat, breaking it up with a wooden spoon.  
Once the meat is all broken, add in all of the spices, except for the chocolate.  Stir very well.
 
Next, make space in the middle of the pot, add in the garlic.  Once it is fragrant, mix well into the meat mixture.
 
Add in the drained and rinsed beans, beer, and chocolate.  Add as much water that is needed to cover all of the ingredients.  Usually 1 1/2 beer bottles full.
 
Bring to a boil, cover, reduce heat.  Cook 2-2/1/2 hours, stirring occasionally. 
 
Vent the cover the last 30 minutes if you like a thicker chili.
 
Serve with your favorite toppings.
