I have a confession to make, I don’t know if I will be able to handle leaving my cat when the world “returns to normal.” Ms. Gersey is my constant companion. I can’t go anywhere without her. She even comes out into the back yard with me now. I think I created a monster. She cries and attacks the back door until I either pick her up and hold her by the window so she can see out, or take her out back.

How cute is that little face though? She just wants to be a part of the action. I think Gersey has FOMO. LOL

Now that I know I have the worlds best guard cat, I can relax. No other animal, bird or squirrel will make it past her.

Chicken with Lemon and Broccoli
- 4 chicken breasts
- 4 chicken thighs
- 1/2 onion, chopped
- 2 cloves garlic, sliced
- 1 medium lemon
- 1 tsp Seasoned Salt Mix
- 15 grinds of @TraderJoes Lemon Pepper Seasoning
- 4 Tbsp olive oil
- 1 head broccoli, cut into spears
Preheat oven to 325’F.
Preheat a heavy bottom pot that is oven safe. Add oil to pan.
Season both sides of the chicken with seasoned salt mix. In batches, brown on both sides, then remove from pan.
Add onion to pan, season with salt. As onions cook, scrape bottom of pan to get the brown bits up. They have lots of flavor. Then add in garlic so that it does not burn.
Once onions are soft, add chicken back to pan, along with any juices.
Arrange broccoli in pan, squeeze lemon over all the chicken and broccoli. Season with @TraderJoes Lemon Pepper seasoning, about 15 grinds was enough for my whole pan.
Cover, cook in oven 20-25 minutes until chicken is cooked through.
This chicken dish is so simple, yet so satisfying.
