Overnight Honey Oats

Good morning!  How are you on this fine day?

I am trying really hard everyday to remind myself to be thankful for just one thing, everyday. Keeping my family fed is something that I am very thankful for.  

We are all getting frustrated with staying home.  But in staying home, I am healthy.  My son is healthy.  My husband still has to go to work everyday, but that is only one of us that has to go out. By taking precautions, we are doing all we can to keep our family safe. 

Since all this has started, he has been bringing his breakfast and lunch with him.  Mr. Table is a truck driver, so he knows all the good lunch spots.  Or the deli that has the best coffee.  And would normally have his meals out during the work day.  But right now, we are trying to minimize our contact with the outside world.  So I try to give him some options that are easy to take on the go. 

Overnight oats are great for this.  All he needs is a spoon, and breakfast is ready to go.  It feels good to know that I can still give my family a healthy meal, even on the go.

vanilla in overnight oats

Breakfast ready to go

Overnight Honey Oats

For each serving:
  • 1/2 cup old fashioned oats
  • 1 cup oat milk
  • 1 Tbsp honey
  • 1/8 tsp vanilla
  • pinch of salt

Add all ingredients to a jar, cover, shake to combine.

Store in fridge 6-8 hours, or overnight.
