I hope you were able to do what you wanted to do this weekend.
I feel like sometimes we are pressured into doing things that others want us to do. And sometimes that is okay. But I also feel that sometimes it is okay to say no, I don’t want to do that, I want to do this.
Are you the type of person that just goes with the flow? Or are you like me, and need to have your opinion heard?
I will follow my husbands lead, and usually be okay with plans that he has made, or choices he has made. But there are those times when I just don’t wanna. What ever it may be, going out, cooking, a TV show. I just dont wanna. Thank God I have a husband who respects my wishes, and listens to what I have to say, and takes my feelings into consideration. He really is the best. EVER!!
“I don’t wanna” is where this sandwich came from. We drove out to our camper on a Friday afternoon. I had already taken care of chores at home, and I was so tired. Cooking dinner was the last thing on my mind. So I grilled up some chicken breasts. Add a bit of lettuce, some Cesar dressing, and there you go!
Really, I just amaze myself sometimes.

I used @Udisglutenfree Sandwich bread. As you know, I have tried 4556224556 times already to bake a delicious loaf of gluten free bread, but have not had success with sandwich bread yet. Thank you @Udisglutenfree for making a bread that doesn’t make me sick 😉
Chicken Cesar Sandwich
- 1 chicken breast
- BBQ Rub
- Cesar dressing, as desired
- 2 ribs Romaine lettuce
- 2 slices bread, I used @UdisGlutenFree
Generously rub the chicken breast with BBQ Rub. Grill over medium heat 5-6 minutes per side.
Toast the bread on your grill.
Spread some dressing on one piece of bread. Lay the chicken on top, add the lettuce and second slice of bread.

Delicious food does not have to be difficult. This sandwich was so satisfying, and only took me 15 minutes, from start to finish
