Hello. How’s it going today?
Can we talk about something? Why is it so hard for people to do this social distancing? Yes, we all know that the projected numbers of people getting sick are much less than first anticipated. But that is because all of these measures have been put into place to help stop the spread of this wicked virus.
And yes, I understand that not everyone will get sick. And a majority of those that do get sick, recover and are perfectly fine. But what about those people that don’t? I do not think that any one of us could live with ourselves if we knew that we were the person who spread the virus to the healthy 26 year old that died. Or the 86 year old grandma that had nothing else wrong with her. Or the 5 year old girl that still had her whole life ahead of her?
No one wants to take away your civil liberties. We just want to make sure that our children, brothers, sisters, wives, husbands, mothers and fathers are safe.
So go out and take that walk, ride your bike, order food from your favorite restaurant and bring it home. Lets be safe and smart for the other people in this world that are not as healthy as we are.
And while you are being the great human being that I know you are, make yourself something delicious to eat. Because after all, you deserve it.




Oven Roasted Zucchini Slices
- 2-3 medium zucchini, sliced
- 1 tsp dried basil
- 1/2 tsp seasoned salt mix
- 1 Tbsp fresh grated Asiago cheese (optional)
OR
- 2 tsp nutritional yeast
Preheat your oven to 400’F.
Line and grease your oven trays.
Mix seasonings in a small bowl.
Lay out the zucchini, so that they are not touching. Cook in preheated oven 10 minutes. Flip over each zucchini slice, cook additional 5-8 minutes until they are brown on both sides.
As soon as you take the zucchini out of the oven, sprinkle seasoning mixture on zucchini.
These are delicious hot out of the oven, or at room temperature.
