Arugula and Orange Salad

Happy Friday!  It is once again the weekend.  Remember to get in your me time.  It’s important.

On Friday, I usually accomplish all of my errands for the week after work.  Because I’m so busy, I try to keep dinner simple.  But just because its simple, does not mean that it wont be delicious.  I really do prefer the simpler meals.

The first time I had this salad, was in a restaurant.  It was a bit fancier than what I eat now.  It had warm goat cheese wontons, and sliced red onion.  I really liked it.  And used to make it at home, with just pieces of goat cheese broken into the salad.  Ahh, the days of gluten and dairy.  And gas, and bloating, and those weird eczema spots on my arm.  Um, so not worth it.

You know what, orange and arugala mixed together, are really yummy.  A bit spicy from the green, a burst of sweetness with a hint of sour from the orange.  So good!!  Put these two together, and tell me I’m wrong.  I dare you. 

A simple side, for a quick and delicious meal.  

Place arugula in a bowl
Add on the cut orange
Toss well with dressing to serve

Arugula and Orange Salad

  • 2 cups baby arugula
  • 1/2 naval orange
  • 1/2 tsp Seasoned Salt Mix
  • 1/8 tsp garlic powder
  • 1/4 tsp Italian seasoning
  • 2 Tbsp orange juice, fresh squeezed
  • 3 Tbps extra virgin olive oil

Put arugula in large bowl.  Add in peeled and chopped 1/2 orange.  

In a separate container, mix salt, garlic powder, Italian seasoning with orange juice.  

Slowly drizzle in oil while continuing to mix.  

Once mixed, pour desired amount over greens and orange in bowl. 

Mix well and serve.

I think this salad is great next to grilled meat.  It is also delicious with a scoop of chicken salad for lunch.
