Take today to rest, and recharge for the week ahead. Eat something delicious. Treat yourself. With these whipped sweet potatoes.
Sweet potatoes are a regular part of our diet. We eat them at least once a week, and I try to change things up. No one wants to eat the same things over and over.
Yes, we are still eating sweet potato, but its not baked again. Or as fries. Its like I’m tricking myself, and let me tell you. Its working.
Getting sick of eating a food, when you have such a small variety to choose from, is not fun.
These whipped potatoes are so comforting. They go great with any meal. Or as a snack. Maybe even dessert.





Whipped Sweet Potatoes
- 3 medium or 2 large sweet potatoes, peeled and cut up
- 3 Tbsp butter or olive oil
- 1 tsp sea salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 Tbsp oat milk
Boil potatoes until they are fork tender. Drain, and add back to hot pot. Add butter if using.
Using a hand mixer, whip potatoes until mostly smooth.
Add in seasonings, and oil now if not using butter.
Whip potatoes until smooth, or desired consistency.
