Spring is in the air. I can feel it. I swear. The days are getting longer. The sun sets are so pretty.
I want to invite friends over, have laughs, sit around the fire pit. But no one wants to sit by a fire right now. This virus going around has everyone in hibernation. How can I roast a @Smashmallow without fire? Guess I’ll have to make one all by myself.
So instead, I will make believe my friends are coming over. And make this Pesto Chicken. This is always a hit at our summer BBQ’s. The longer you let the chicken marinate, the yummier it is.





Pesto Chicken
- 5-6 boneless, skinless chicken thighs
- 3-4 boneless, skinless chicken breasts
- 1/2-3/4 cup Presto Pesto
- Seasoned Salt Mix to taste
Mix your chicken and pesto in a bowl. Cover with plastic wrap.
Marinate at least 2 hours. The longer you marinate the chicken, the better it is.
When you are ready to eat, preheat your grill to 400′.
Grill your chicken 7 minutes. Turn only once, grill an additional 5-7 minutes, until your chicken is cooked through.
