How Do You Like To Eat Your Ice Cream?

Are you ready for the week ahead?
Can you believe the summer is already coming to an end? I feel like even though we are not back to a “normal” life, this last month went by so much faster than the past few months. Do you agree?
This past month has had some changes here in the Table Household.
I have gone back to work, but not in the same capacity as before. I am now working from home. I still work for the same company, but in a very different position.
As I have talked about in previous posts, Table Jr has an immune deficiency. With all of the uncertainty still surrounding the COVID virus, it is safer if I no longer work in a clinical setting.
With that being said, my company was able to offer me a position, working from home as a call center agent. This is a remote position, which means that I still have some kind of an income, and I can keep myself as well as my son safe.
I am honestly grateful to still have a job. There are too many people that have lost their jobs, homes and entire lives have been turned upside down because of the current situation.
Hopefully one day things can go back to how they were. Until then, I will keep a smile on my face with this ice cream treat. I never liked ice cream growing up. Maybe because I was never a “milk” person. I now know that I need to limit the amount of cow dairy in my diet.
Thank God for coconut milk ice cream. Here I just put a spoonful of blueberry jam, a small handful of mini chocolate chips, and boy was it a treat.
