Honey Granola

Hi all.  

Have you smiled yet today?  Stop.  Close your eyes.  Wait, read the next few sentences first.  Take a deep breath.  Hold it for 10 seconds.  Let it out slowly.  Now do it again.  Think about what makes you happiest.

Now keep that thought with you all day.  When you feel like this time is never going to end,  know that there is a light at the end of the tunnel.  Let your happy thought be the guide that keeps you on path to the end.

And make some of this granola for the ride.  It is the perfect treat for when you want something “nutty,” but can’t eat nuts.

Whisk oil and honey together until creamy
mix toasted oats well with honey mixture
Toss to coat all pieces of hot oats

Honey Granola

  • 3 cups old fashioned oats
  • 1/4 cup honey
  • 1 1/2 Tbsp oil

Preheat oven to 325’F.

Spread old fashioned oats in even layer on cookie sheet.  Bake 10 minutes, mix oats well, bake additional 10 minutes.

Whisk oil and honey in large bowl until creamy.  Add in hot toasted oats.  Toss to coat each oat well.

Return to parchment lined cookie sheet.  Cook additional 8-10 minutes, rotating the pan half way until golden.

Cool completely on cookie sheet.  Break into desired pieces.
