Do you cook dinner every night? We do in our house. When I was working full time outside of our home, I did not cook on Thursdays. I was in the office late with my physician, and by the time I got home, it was way too late to cook.
On those nights, Table Jr. would eat with my mom. A date night of sorts that started out when he was very young. Mr Table would usually do whatever needed to be done, that we could not get to the rest of the week.
Now that I am not working outside of the house, I am able to cook dinner every night. Honestly, I do not mind. Ordering out can be a challenge, because of my extensive allergies. Most times I get grilled chicken with some sauteed greens. I can make that myself and save money.
Some nights the boys will order, and I will make myself something to “match” their meal. Whether its gluten and tomato free pizza, or recreate my favorite dishes from the local Chinese restaurant.
Most nights I figure out what to make. This night though, Table Jr is to thank for this meal.
A few weeks ago I made a Ginger Salmon, and he commented how delicious he thought the sauce would be on chicken. Any excuse to have chicken wings, and I’m in.
We made these with wings and tenders. Both were AH-mazing! Boiling the marinade to pour over the chicken is a step that you really don’t want to miss.







Ginger Chicken Wings
- 1 lb chicken wings
- 1 Tbsp buckwheat honey
- 1 Tbsp rice wine vinegar
- 4 Tbsp coconut aminos
- 2 tsp scallions
- 1/2 tsp ground ginger
- 1 Tbsp chopped ginger
- 1/2 tsp fine sea salt
- 2 Tbsp olive oil
Trim and clean the chicken wings.
Mix all marinade ingredients in a large bowl.
Add in chicken, cover and marinate in the refrigerator 12 hours, or up to overnight.
Grill over medium heat 6-8 minutes per side, until the internal temperature reaches 165’F.
Pour remaining marinade into a small saucepan. Bring marinade to a rolling boil for 5 minutes. It will thicken slightly.
Remove chicken from grill, place in high rimmed pan. Pour boiled marinade over chicken.

We doubled the marinade recipe, and made chicken tenders as well. You only need to marinade the tenders 2-4 hours, and they will be delicious.
