Its Thursday. What I like to call Friday Eve. Do you have plans for the weekend?
Are you ready to get back to your “old life?” Honestly, I don’t want my “old life” back. I was always running from one point to the next. I was out of the house from 7:30 until about 6 most days, about 8pm on Thursday. Friday was work, then all the outside errands that needed to be taken care of for the week. Saturdays were set for all the laundy, house work and any yard work that needed to be done. Sundays were for being in the kitchen all day long, to prep food to eat out of the house during the upcoming week. Phew, Im exhausted just typing all of that.
Now that I work from home, I can spread my chores out during the week. I still wake up at the same time, so I use my old travel time to get some things done. It’s amazing how much can be accomplished when no one else is around. Mr. Table has already left for work at that time, and Table Jr is a still in bed. Who knew I would come to enjoy quiet mornings to get chores done.
Working from home has made me more of a homebody as well. Some might say that is not such a good thing. I’ve always preferred to stay home, but now I really have no reason to leave. My groceries get delivered at 6am, I do my laundry at home, you can take pictures of checks now for deposit. This might be a dream come true for me. Life in my own little bubble……..
Ok, back to reality. Just because I work from home now, does not mean I still don’t want to have a fast and satisfying meal on the table. We cook at home every night, so having different meals in our rotation is a must. This Garlic Shrimp is a great weeknight meal. Not only is it only a handful of ingredients, but it takes just minutes to cook.
Garlic Shrimp is equally delicious on its own, over pasta, or over rice. Go ahead and surprise your family with this on a week night. They will think you were in the kitchen all day, when really you were taking a nap. Go ahead, I won’t tell, promise.





Garlic Shrimp
- 1 lb shrimp, cleaned
- 6-7 cloves garlic, minced
- 1 medium shallot, minced
- 2 lemons, juice from 1 1/2, save the last half for serving
- 3/4 tsp Seasoned Salt Mix
- 2-3 Tbsp olive oil
Mix 1-2 Tbsp olive oil, salt, garlic, shallot and juice from 1 1/2 lemons in a dish. Add in shrimp, mix well. Set in refrigerator to marinate for 1-2 hours.
Heat a large heavy bottom pan over medium high heat. Add in remaining 1-2 Tbsp olive oil. Once the oil is hot, add in shrimp. Cook about 2 minutes per side until the shrimp turns pink.
Serve with remaining lemon cut into wedges.
