The title of today’s post is a long one, I know. But I promise, it’s a delicious one.
A couple of weeks ago, I made a Banana Chocolate Swirl Cake. It was so good! We also had a few other treats in the house at the same time, so we did not eat the whole cake. A few days later, I was wondering what I should make for dinner, and what did I see in the fridge? Half of the Banana Chocolate Swirl Cake!
Having breakfast foods for dinner is a common occurrence around here. We really like breakfast, and it is a nice change. Who says eggs are only to be eaten in the morning?
So I am calling this a baked french toast, but apparently it is actually bread pudding. You can call it whatever you like, just make sure you call me to eat some.
You can make this recipe with any flavor cake or bread you have. Im sure it will be just as delicious. Just remember you don’t want to use fresh cake or bread, a few days old is better. The dry cake will soak up the custard and give you the most amazing texture.







French Toast Bake with Banana Chocolate Swirl Cake
- 5-6 cups cubed bread/cake
- 2 cups oat milk
- 3 large eggs
- 4 Tbsp coconut yogurt, unsweetened
- 2 tsp vanilla
Preheat the oven to 350’F. Grease an oven safe baking dish.
Cube up the bread and spread in the greased dish.
Mix all ingredients for the custard together, and pour over the bread cubes. Let is rest 10-15 minutes to soak up as much liquid as possible.
Bake uncovered 35-45 minutes, until it springs back when touched.
Let the baked french toast rest 5 minutes before serving.
