Comforting Breakfast

Is winter over yet?  Don’t get me wrong, I love the change of season.  That is one of the reasons why I live where I do.  You need snow for Christmas, and a hot a$ day for July 4th.  That’s just how is goes folks.

But its the last days of winter, and I am ready to put away the big bulky jacket.  I want my windows open, and not have to turn the heat up.  Is that really too much to ask?  I didn’t think so.

So on days like today, when I need to warm up my insides, I look for a comforting bowl of hot cereal.  I loved farina growing up.  If I tried to eat that now, I would look like Stay Puft The Marshmallow Man.  Not a good look for me.  So whats a girl to do?  Granulated rice cereal.  It has the same luscious, velvety feel in your mouth, without the bloat and projectile vomiting of cream of wheat.  I say win win situation here. 

Measure out your rice granules
Use half cup dairy free milk, I like oat
Add milk, half cup water, coconut sugar,pinch of salt and vanilla to a pot over medium-low heat
Continously whisk while adding your rice granules to just bubbling liquid
Serve with your favorite toppings.

Creamy Rice Cereal (one serving)

  • 1/4 cup rice granules, gluten free
  • 1/2 cup dairy free milk, I use oat
  • 1/2 cup water
  • 1/2 tsp vanilla
  • 1-2 Tbsp coconut sugar
  • pinch sea salt

Measure rice granules, set aside.

Add all other ingredients to small pot over medium-low heat.  Once mixture starts to bubble, (careful to not boil.  It will go over.) whisk in rice granules.  Keep whisking while the mixture cooks over low heat until the mixture is smooth.  

Cook on low 2 minutes.  Cover, turn off heat.  Let stand 5 minutes.

Whisk again before serving.  Add your favorite toppings, like fruit, honey, or granola.  

I like to top my hot rice cereal with more milk, and a sprinkle of coconut sugar.
