Grilled Citrus Chicken

Hello to you all.  How is it going today?

It is almost the end of the week, just one more day to go.  I know that you can do it! I have faith in all of you. 

How has your summer been going so far?  I know it is only the first few weeks, but hopefully you have had time to do something fun.  Maybe you went to a drive in movie, or a walk on the beach, spent some time at the park.  What ever it is that puts a smile on your face, I pray that you have had the opportunity to do it.

Mr Table and I have enjoyed some time at the campground.  Made some new friends as well.  It really makes me happy to get out of the city.  Not everyone in the city is rude, or mean, but I really feel that there are more of those kinds of people here than when we leave the city.  

Is it really that hard to just smile at someone?  Or to give a quick wave and a “Good morning?”  

When you live in the same neighborhood, or shop at the same grocery store, you usually see the same faces.  Probably not every single time you go in, but I would say that the same people see the same people.  We don’t all have to be friends and hang out, but if you shop every Thursday morning at 8 am, and so do I, just a smile back would go a long way.  I hate how the rudeness of others makes me not want to be around people.

When I first meet new people, I am very quiet.  I am not normally a “people person.”  Most people that I know don’t believe that about me.  If I know you, all bets are off.  We can talk about anything and everything.  

Or when I was at work, my coworkers would comment on my abiltiy to talk to anyone.  But what they didn’t realize is that was a part of my job.  Most people who go to see a specialist, are nervous.  I would always try my best to make sure they felt at ease, and had a good experience with myself and my doctor.  

In my personal life, I am so content with the 3 friends that I have.  🤣  I know what to expect from them, they know what to expect from me.  No scary situations, not having to hold my tongue (not very good at that anyway) and being able to be myself without judgement.  I think this is what we all want in our lives.  But some of us are scared, or not sure how to go about being themselves.  I will let you in on the secret….Its not having a whole lot of friends, its having just a handful that you can be the real you with.

So go ahead, invite some people to share a meal with you.  Grilling outside is a great way for us to start to get together with all of the loved ones we have missed these last few months.  And when you serve them this Citrus Chicken, they will love you even more.

Hands off my dish! Does anyone else like the really dark pieces?

Citrus Chicken

  • 1 1/2 lbs chicken, your favorite cuts
  • 1 medium lemon
  • 1 medium lime
  • 1 medium orange
  • 3 cloves garlic, grated with zester or minced very finely
  • 1/2 cup extra virgin olive oil
  • 2 Tbsp Seasoned Salt Mix

Use a large bowl for marinating the chicken.  

Zest and juice all of the citrus.  Add the rinds when you are done to the bowl of chicken, they add lots of flavor. 

Mix all of your ingredients in a small bowl.  

Pour over the chicken.  Mix well, making sure all pieces of chicken are well coated.  

Cover, marinate 3-6 hours.  You can go longer if you wish.

Preheat your grill to medium high heat.  Grill the chicken 8-12 minutes per side, depending on cut, until it is cooked through. 

Enjoy.

We served this chicken with a simple salad.  It was one of the best meals we have made in a long time.
