Vanilla Bean Rice Pudding

Good morning.  Happy Friday to you.  Do you have any plans for the weekend?

I am happy to say I will be going to the campground, and staying a few extra days to enjoy some time with a great friend!

Since it is the summer, I try to not use the oven too often.  It makes the house so warm.  Some days the AC has a hard enough time keeping the house comfy.  I don’t want to add to it.  But just because its hot out, doesn’t mean I won’t want to have desert after dinner.  Rice Pudding is a great treat to make, because it is done on the stove top.  One pot, and a cool kitchen?  I’m in.

Usually when we make rice pudding, we use left over rice.  You can make the rice fresh for this recipe, but I feel that the rice grains keep their shape better using day old rice.

Vanilla Bean Rice Pudding

  • 2 cups cooked rice
  • 3 cups oat milk
  • 1 vanilla bean, halved and scraped of seeds
  • 1 cinnamon stick
  • 1/2 tsp salt
  • 4 Tbsp coconut sugar

Combine all ingredients in a medium pot. 

Cook over medium-low heat.  Be careful not to boil. 

Stir frequently, until the rice soaks up the milk, and becomes creamy.

Serve with extra cinnamon if desired.
