Chorizo

Good morning you wonderful people.

It was recently Cinco de Mayo, and in honor I made some chorizo rice balls for my family for dinner.  Nothing says Happy Not Real Mexican Holiday than some Italian rice balls.  Yeah!

This chorizo spice mix that I use is a combination of many recipes that I have seen over the years.  Some were way to spicy.  Others way to complicated.  I took the basics, and adjusted to a comfortable spice level for myself and my son.  Mr. Table likes things a bit spicier.  He adds hot sauce to everything.  

Normally you would make chorizo out of pork.  I did not have any ground pork in the freezer this week, but I did have 3 packs of ground beef.  So, beef chorizo it is.  And let me tell you, it was really good!!

Add all the dry to your ground meat

So simple, yet so delicious

Chorizo 

  • 1 lb ground meat
  • 2 tsp cumin
  • 1/4 tsp cinnamon
  • 1 tsp oregano
  • 1/2 tsp ground thyme
  • 1 Tbsp garlic powder
  • 1/2 tsp black pepper
  • 2 Tbsp chili powder
  • 1 Tbsp ancho chili powder
  • 4 Tbsp Apple cider vinegar
  • dash of allspice

Mix all ingredients well in a large bowl.  

The longer you let the meat rest, the more flavors will develop.  This also freezes very well.
