If you are a daily follower of the blog, you might remember that it was Table Jr’s birthday a few weeks ago. We had a Birthday Brookie as his cake. Which was absolutely yummy. Chocolate with chocolate? Umm, yes please.
So my son says to me the other day, “Why don’t you ever make just brownies?” Good question son, good question.
I am happy to say that “I made brownies son, just for you!” And boy are they good!
They are not firm like you need for the bottom of a brookie, but fudgey, and rich, and oh so good.








Chocolate Brownies
- 1 cup cacao powder, sifted
- 1 3/4 cup coconut sugar
- 1 cup oat flour
- 1/2 tsp salt
- 3 eggs, whisked
- 1 Tbsp vanilla
- 1/2 cup shortening, melted and cooled
Preheat oven to 325’F. Line a rimmed cookie sheet with parchment paper, set aside.
Mix dry ingredients in large bowl.
Mix wet ingredients together, then pour over the dry. Fold until combined. The batter will be very thick.
Use wet hands to smooth and evenly spread the brownie batter in the pan.
Bake 20-25 minutes in the preheated oven.
Cool completely before slicing.
