Chickpea Pasta and Vegetables

Good morning.  

How are you doing on this fine September day?  Isn’t the early morning weather great this time of year?

The morings around here are so enjoyable.  Since I have been working from home, I have been able to spend just a few minutes breathing in the fresh morning air, and I have to say it really makes a huge difference in my day.

One of the bonuses of working from home is that I can change my surroundings.  When it is not so hot out, I can work at my patio table and listen to the sounds of the birds call each other and the neighborhood kids playing outside .  But then I can also hear the landscaper working, or delivery trucks going by, so then I go back inside to work.

It really is a blessing to be able to wake up, take my time in the morning and not have to worry about traffic.  Or if my uniform is wrinkled.  

I really did enjoy my previous position, and I miss helping all of my patients that I had gotten to know over the last 18 years.  But I honestly believe God gives us what we need, when we need it. Currently I need to work from home to feel safe.  I do not believe all of the media hype.  What I do know is that COVID is a real virus, that can do really horrible things to people.  Especially people with underlying medical issues.  

We have lost family members to this terribleness, and I will do all that I can to make sure I am not the one to bring it home to anyone.  

It still baffles my mind that politicians will not allow us to eat out in a restaurant, not that I want to, or go to a movie, but children can sit in a classroom all day long with others.  

My prayer is that this virus gets under control sooner rather than later, and we can all go back to not being afraid to hug our loved ones.  Or if we accidentally bump into a stranger in the store, not have our first thoughts be “Eeewwwww.”  

One thing I know is that when I do get to see my whole family again, this Chickpea Pasta with Vegetables will definately be on the menu.  

Since the pasta is made from only chickpeas, you know it will taste amazing.  And it is loaded with protein, so it is sure to satisfy even the hungriest at the table.  With all of the vegetables that are in this dish, it’s all you need for a quick, delicious and nutritious meal.

Cook the broccoli, onion, garlic and shallots in olive oil

Mix the pasta and vegetables together, all in the pan you cooked the vegetables in

Chickpea Pasta with Vegetables

  • 1 box chickpea pasta, cook according to package directions
  • 1 head broccoli, cut into florets
  • 1 large shallot, sliced
  • 1 medium onion, sliced
  • 2-3 cloves garlic, minced
  • 2 medium carrots, shaved with a vegetable peeler
  • 1 1/2 tsp seasoned salt mix
  • 3-4 tsp olive oil
  • 1 cup reserved pasta water as needed

Cook the pasta according to the package directions.  Reserve 1 cup of the pasta water to create your sauce.

While the pasta is cooking,  sautee the broccoli, garlic, shallot and onion in olive oil in a large heavy bottomed pot.  Once the onion and shallots are cooked and the broccoli starts to soften, add in shaved carrots. 

Next add in the cooked pasta.  Fold into the vegetables.

Add in reserved pasta water as needed to create a sauce to coat all of your vegetables and pasta.

You can serve this Chickpea Pasta hot, or at room temperature.
