The weather has definitely started to take a change around here. It is really feeling like fall. Blustery cold fall mornings and afternoons. I am missing the warmer afternoons, when I was able to sit outside in the yard to work.
That is the best part of my new position. Working in my backyard. We don’t have the largest yard by any means, but it is so comfortable. And peaceful. And outside. Fresh air. Birds chirping. So much better than being behind my desk inside all day long.
I try to find the positive in every situation. It is true that I do not love the cold weather as much as the warmer days. What I try to remember is what am I thankful for now? What can this season offer? Something to be thankful for with the colder weather is winter squashes. We use lots of winter squash around here. Especially butternut. So when everyone else is wondering how else to pumpkin spice it up, I was dreaming about my next butternut recipe. And boy, did I dream up something delicious.
This Butternut Squash Blender Bread is so moist, and flavorful. It is great as an afternoon snack, or as a sweet treat for breakfast. Since this is a blender bread, it comes together in a flash too. Having this bread as french toast is perfection.






Butternut Squash Blender Bread
- 2 cups oat flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1 heaping tsp cinnamon
- 1/8 tsp ground cloves
- 1/2 cup coconut sugar
- 2 Tbsp shortening
- 3 large eggs
- 1 15oz can butternut squash
Preheat oven to 325’F. Grease and flour your loaf pan.
Add all of your ingredients to a high speed blender. Blend for 2-3 minutes until all of the ingredients are combined.
Pour into the prepared pan. Bake 45-55 minutes until the center is set, and a toothpick inserted comes out clean.
Cool in pan 10 minutes, then cool completely on a rack.
Dust with powdered sugar if desired before serving.
