Chicken is something that we eat in our house most frequently. Is it the same in your house?
Even though we eat a lot of chicken, I try my hardest to make all kinds of different dishes. I know there are people who like to have a certain meal, on certain days of the week. Growing up, I remember a friend from school knowing what was for dinner based on what day of the week it was.
Eating the same meals, every week would drive me to Bedlam. That is why I try to look at the ingredients that I have on hand, and make something new and different. It might be the same ingredients, but when you cook and present them in a new way, you get a new meal👌
This Broccoli and Cheese Stuffed Chicken does have cheese in it. You can substitute for dairy free cheese without any issue. I have shared in the past that I am able to eat and properly digest swiss types of cheese. My CNP and I believe this is because the same bacteria used to create swiss cheese is the same probiotic that I take daily. I am not going to question it, just really enjoy it.















Broccoli and Cheese Stuffed Chicken
- 8 chicken breasts
- 6 oz broccoli
- 3 cloves garlic
- 1/2 cup Jarlsberg cheese, grated
- 1/2 cup Gruyere cheese, grated
- 3 tsp seasoned salt mix
Preheat the oven to 350’F. Line a baking sheet, lightly oil so the chicken does not stick. Set aside.
Lay the chicken breast on a cutting board, cover with plastic wrap. Use a food mallet/meat tenderizer to pound out the chicken. Use the smooth side to pound the breast out thinly.
To make the filling, add broccoli, cheeses, garlic and 2 tsp salt to your food processor. Pulse until it is chopped finely and mixed well.
Lay out the pounded chicken. Season with salt. Spoon some of the filling onto the chicken, pressing it down onto the chicken breast. Roll up the breasts, placing seam side down on the baking tray.
Once all rolled up, season the tops with a bit more seasoned salt mix.
Spray or drizzle the tops with olive oil before placing into the oven. Bake 25-35 minutes until the chicken is cooked though.
