Today’s title was a long one, no? Don’t worry, the cookie makes up for the name. These are based on a cookie recipe from @KelseyNixon Banana Chocolate Chip Cookie.
Thank you @KelseyNixon for your wonderful mind. These are sooo good. Whenever we have over ripe banana’s in our house, the boys want these cookies.
Any way to sneak more fruits in their diet, right? LOL
Go ahead, make these cookies. They will make you love @KelseyNixon as much as I do.







Banana Bread Oatmeal Chocolate Chip Cookies
Based on @KelseyNixon “Banana Chocolate Chip Cookies”
- 3/4 cup coconut sugar
- 3/4 cup shortening
- 4 very ripe bananas, mashed
- 2 large eggs
- 1 Tbsp vanilla
- 1 3/4 cup rolled oats
- 1 cup + 2 Tbsp oat flour
- 2 Tbsp coconut flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup chocolate chips
Pre-heat oven 350’F.
Mix dry ingredients, set aside.
Mash banana in medium bowl, add in eggs and vanilla. Set aside.
Cream coconut sugar and shortening. Fold in banana mixture.
Add dry ingredients on top. Fold until just mixed.
Fold in chocolate chips.
Scoop onto lined tray, bake 20 minutes, rotating pans half way.
Cool completely on cookie sheet.
