Bacon and Cabbage
“Eat your vegetables!” Who else remembers being told that as a kid? Now don’t get me wrong. I like veggies, even when I was little. But if my mom put bacon in there, she would never of had to utter those words. AmIRight???
What are your favorite veggies, and how do you make them? This cabbage dish has to be one of the simplest, most yummy ways to eat it.
Chop, add to pan, cook and eat.
Simple, yummy, BOOM. There’s dinner.
- 4-5 slices bacon
- 1/2 large onion
- 1/2 large head cabbage
- 2 Tbsp olive oil
- Seasoned Salt Mix to taste (omit pepper for AIP)
- 2-4 Tbsp water
Slice your bacon, onion and cabbage.
Add bacon to pan with olive oil. Cook until slightly crispy on the edges.
Add in onion. Cook until the onion is translucent. 4-5 minutes. Add in cabbage, mix to coat well with oils in pan.
Add in water, scrape bottom of pan to releases all of the yummy bits.
Cover and cook 30-45 minutes, until the cabbage is soft, buttery and tender.
Serve as a side, or over pasta.
