Fries!! Crispy on the outside, fluffy on the inside. YUM! So what’s a girl to do when she can’t eat white potatoes, but NEEDS fries?? YUCCA!!
Ladies and gents, this tuber has saved my life. Mashed “potato?” Yes. “Potato” croquet? Got you. Roasted “potato?” Yucca is your guy!
Most of the recipes I have found tell you to boil the yucca for 20 minutes, and serve. I found that makes the yucca gummy. And bland.
My secret to the most fluffy inside and crispy outside? STEAM it! You know, that silly little contraption everyone has in the back of the cabinet??? Now you will have a use for it.
Go ahead, try some yucca fries. Who needs a potato anyway?





Yucca Fries
- 1-2 lbs yucca, I use frozen
- Seasoned Salt Mix to taste (omit pepper for AIP)
- oil for frying
Steam your yucca for 20 minutes, or until a fork can easily penetrate the yucca.
Slice into your desired shape.
Fry 5-7 minutes until golden
Salt and enjoy
