Sweet potatoes are something that I used to think about only during Thanksgiving time. But then I developed so many allergies in my early 30’s, and could not eat night shade vegetables any longer. White potatoes are in the night shade family. I have been able to reintroduce some night shades, but unfortunately, potato has not been one of them.
So whats a girl to do when she wants that starchy side to go with dinner? No more fries, or hash browns, or chips?
It took me some time, but then I realized that I could use sweet potatoes in place of white potato. Boy was I a happy girl that day.
These hash browns are so fast and easy, and go with any meal. Want some hash browns with your eggs, done. Need a different potato side to go with that steak. Here you go.







Sweet Potato Hash Brown
- 1 sweet potato, grated
- 1/2 medium onion, grated
- 3/4 tsp seasoned salt mix
- 1 large egg
- 1-2 Tbsp tapioca starch
- oil for frying
Mix all ingredients together.
Let rest a few minutes so that the starch can absorb any extra liquid.
Heat oil in a pan.
Form into patties, fry on each side 4-5 minutes, until golden brown.
Sprinkle with seasoned salt mix after frying.
